Colle Manora | Ray
Colle Manora RAY fascinating character. Dry red wine with purple reflections; intense, enveloping, complex bouquet with a predominance of fruity and floral sensations along with a strong spicy component and notes of toast. Pairs the typical scents of Nebbiolo and Barbera grapes in an unusual and elegant equilibrium. Flavour is full, well-structured, persistent and harmonious, with a persistent aftertaste on the palate. Pairs well with charcuterie, boiled meat, stews, roasts, and ripe cheeses. Suitable for dishes of red meat, chicken liver or giblets cooked with herbs; also pairs surprisingly well with all varieties of fish cooked with tomatoes, fried in batter or baked.

GRAPES IN PRODUCTION
The rare Albarossa, a variety of Piedmontese grape, a cross of Chatus (Nebbiolo Dronfield ) with Barbera that was discovered in 1938 by Prof. Dalmasso of Turin who was searching for new varieties which united Nebbiolo’s elegance and color with the freshness and drinkability of Barbera. With the Controlled Origin Denomination (DOC) it has become more widespread and recognized over the past decade. Colle manora is pleased to present this lost grape back to the 21st century, RAY Monferrato Rosso D.O.C
Grapes are harvested manually according to their various ripening times, and quality. Fermentation with maceration in traditional wooden tubs for 12 to 18 days. Manual punching down of the cap and racking off followed by malolactic fermentation. The wine is refined during the following winter months, and the vinification process closes with bottling when the first warm days come.
