The town of Montefalco is famous for the extraordinary wines produced, as the Montefalco Sagrantino DOCG Passito, sweet wine with high alcohol content from which it derives the Montefalco Sagrantino DOCG dry with the characteristic of its very pronounced tannins and Montefalco Rosso DOC. Besides these wines, the winery “Le Cimate” is honored to produce, Saudade Rosato IGT Umbria. One of the secrets of the goodness of the wines is made from their own land, nature moderately calcareous silt and clay, deep and cool facing south-east and sixth of 4200 plants per hectare. CHARACTERISTICSLe Cimate Saudade Rosato IGT Umbria is obtained from closely selected 100% Sagrantino grapes which are early hand harvested. A deep, clear and consistent pink cherry colour. Hints of cherry, strawberry and blackcurrant make a complex, fresh and fruity aroma with a long lasting in the mouth. It combines with white meats, fresh cheese and grilled fish. It is also excellent for appetizers. VINIFICATION: The vinification is the same of the white wine but made with red grapes. After the harvesting the grapes are macerated with the skins for 12 hours and then they undergo a brief pressing process. The must is left to ferment for 18 days with a temperature between the 13° and the 16°C. It is periodically decanted in order to facilitate the cleaning of the wine. After 6 months in steel tanks, it is cleared and filtered. Refined 2 months in bottles. TERROIR: It is a silt-clay soil moderately calcareous, fresh and deep with the vines exposed to the south-east and a plantation density of 4’200 plants per hectare. Le Cimate winery was born in 2011 from the desire of Paolo Bartoloni to start a new adventure on the part of the traditional passion for winemaking that has always characterized the Bartoloni family, devoted to agriculture since the 1800s.
