This protected appellation is celebrated for its rich soils, ideal climate, and the unparalleled diversity of apple varieties—over 800 are grown in the region. For this Calvados, Briottet carefully blends bitter apples such as Frequin Rouge, sweet apples like Douce Coëtligné, tart selections including La Petite Jaune, sharp varieties such as La Pigeonnet, and bittersweet fruits like Kermerrien. The result is a cider of remarkable complexity before distillation even begins.
