The Tenuta La Giaretta COR DI VIN 95 – I.G.T. Rosso Veronese is a sweet wine obtained from the same grape varieties as the Amarone della Valpolicella (Corvina, Corvinone, Rondinella), left to wither on wooden grids for a much longer period of time (until March), thus obtaining an optimum concentration of the must.
  • It comes from a pun: Cor is the Verona dialect word for heart, whereas di vin means of wine: that is, the heart of wine. 95 because it consists of a blend of two fine grape varieties: 95% Corvina, the queen of our grapes, and 5% Marselan, a French vine coming from a crossing between Cabernet Sauvignon and Grenache, that we believe gives the wine colour and a distinctive trait both to the nose and the palate.
  • Corvina is an Italian red wine grape most famous as a key constituent of Valpolicella wines, along with Rondinella. Its most commonly cited characteristic is its sour cherry flavour, as well as its lack of color and tannin – Corvina wines tend to be bright red and lighter in structure. The variety also lends itself well to the apassimento process of air-drying grapes, used to make the famous Amarone wine.
  • MATURATION

The peculiarity of this wine is the drying on the vine: a late harvest. Start of the 15 months aging process in small French oak barrels. The chosen oak is a very special selection of woods from the best French forests (medium toast). After 5-7 months of bottle aging, the Cor di Vin 95 is put on sale.
