Le Cimate Rosso di Montefalco is obtained from closely selected Sangiovese, Cabernet, Merlot and Sagrantino grapes. Le Cimate Rosso di Montefalco is clear, luminous and with a consistent ruby colour. An inviting aroma, with hints of plum and cherry. Warm, smooth and enveloping in the mouth, with an elegant tannin which perfectly blends the structure. Refined for 6 months after bottling, it combines perfectly with full flavoured first courses and grilled meat. VINIFICATION: The different varieties of grape are harvested and vinified separately. The fermentation is carried out at 25°C in temperature controlled steel storage tanks. The maceration of the grape skins lasts for 15 days during which time the wine undergoes 3 pump-overs every day. The wine refines 12 months in oak barrels. TERROIR: It is a silt-clay soil moderately calcareous, fresh and deep with the vines exposed to the south-east and a plantation density of 3.000 plants per hectare. Le Cimate winery was born in 2011 from the desire of Paolo Bartoloni to start a new adventure on the part of the traditional passion for wine making that has always characterized the Bartoloni family, devoted to agriculture since the 1800s. Paolo Bartoloni chose to call his project “Le Cimate”, inspired by the name of the hill where the winery is located, which is in fact located at the peak of a hill with panoramic views of the Martani mountains and the town of Montefalco, one of the most picturesque scenery in the heart of Umbria.
